About chef

Both Markos, Marko Magajne and Marko Vršič, are like the curators of a culinary exhibition taking place at Galerija okusov (eng. Gallery of Flavours), where instead of in frames their creations are admired and then eaten on plates.

Marko Magajne, whose passion for cooking was ignited by his mother and grandmother, has been there the longest. He began his journey into the culinary world working with the excellent Igor Jagodic, head chef at Vila Bled as well as Restavracija Strelec in Ljubljana castle. This experience greatly influenced him and shaped his style. He swears by a modern approach to cooking and leans towards local ingredients, but while flirting with modern culinary theory, he also reaches farther. He likes to use ingredients from the wild, often picking and harvesting them himself. From the more classic ones to even daisies, cherry blossoms, dandelions and ferns.

Both chefs swear by butter. They believe it gives a dish its soul.

Marko Vršič got fascinated by cooking when he was only ten years old. His uncle was also a chef. After finishing school, he started working at the Gostilna Pec restaurant, where owner Lovro Visočnik taught him much of what he knows today. Not just about gastronomy, but about growing your own produce in a garden, which intensely fascinated Marko. He honed his knowledge and skill with great enthusiasm, and then used it to invigorate the menu and the whole team at the Galerija okusov restaurant. The energetic Marko Vršič pours his personality, creativity and innovation into his dishes.

Between discovering new ingredients and combining unusual flavours

The ambitious chefs serve up bold creations and unusual but harmonious combinations. But they do not always and immediately agree. Sometimes the idea comes from one, sometimes the other, but they always finish the dish together. Mutual agreement and reciprocal experimentation. Be it on a meat, fish or vegetarian dish. For example, slices of confit capocollo, pickled mustard seeds with honey, parsley waffles and foamy parsley soup. Or fried catfish fillet in a corn tapenade with beer and roasted hop tips. Another good option is roast celery in its own juices with walnuts, gin tonic jelly, celery stalk juice and walnut oil. Their creativity doesn’t even stop at the dessert dishes, where they serve white chocolate with horseradish, honeycomb, black apple puree, thyme and pollen.

The enchant their guests with a fresh approach and take them on a pleasant modern culinary journey.
