A relaxed and motivated cook who is not afraid of challenges. His culinary philosophy is to keep the flavours of meat and vegetables as natural as possible – just as they are.

About chef

As each dish is better if it is prepared with love and a pinch of cheerfulness, guests don’t have to worry with Ban that they won’t receive a top dish.

Nejc became a cook because of his love for cooking, because he likes working with and particularly for people – because he makes their moment or even their day special with his ideas and knowledge. For him, cooking means ‘expressing himself’, so he uses his menus to try and show a piece of himself: “I want guests to feel my joy of working, dishes, flavours.” He also tackles various challenges, as he claims that no challenge is too great or demanding for him if you have the support of a well-coordinated team.

Chef Ban believes that a good cook can whip up an excellent dish with a memorable flavour from a simple ingredient. They constantly learn, follow culinary trends and, in particular, respect their guests. “A good cook must be familiar with various raw ingredients, textures, recipes, and suitably combine them into a whole. They must know several basic flavours of vegetables, meat, herbs, etc., so that they can combine them into a whole in their mind, creating the image of a culinary creation.”

“Cooking is a talent that you develop, upgrade and hone by learning.”

It isn’t easy to follow trends in modern cuisine. He seeks culinary inspiration in local and seasonal flavours from his surroundings. He doesn’t like being a copycat. Therefore, he likes to try new techniques of dish preparation and seeks different ways of plating. At the same time, he tries to remain true to himself and his inner voice.

Most important in all dishes is the seasonal character of ingredients so that they are fresh and prepared not too far in advance

“With such philosophy, we at Otočec Castle strive to present quality local and seasonal ingredients with a modern twist We blend various textures and well-thought-out plating into a special culinary castle story.” Chef Ban includes several people in the culinary process – to taste and comment. In this way, he receives important feedback: “I never listen to just my opinion and don’t insist recklessly on having my way. If the team don’t ‘feel’ a dish, it isn’t worth working on it further.”

His kitchen is permeated with a relaxed atmosphere, as chef Ban is an optimist known for his good humour. He tries to constantly motivate the team in different ways to make them as precise as possible in their work. This frequently pays off, particularly as he is supposedly under ‘the curse of a cake’. “It has happened numerous times that while carrying a cake, I damaged it, ruining the artistic impression. Almost. Luckily, our ingenious confectioners always managed to solve the situation – albeit in the last second. For example, when we hosted around a thousand people at an important event and almost toppled a festive cake due to a wheel than sadly fell off as we entered the main venue.”

Nejc Ban says that he is the happiest when people at ‘his’ table are happy. He makes sure in the kitchen and at the restaurant that the atmosphere and food are nothing less than first-class. He doesn’t use pre-prepared industrial ingredients and dishes. Nejc and his team prepare everything by themselves. This means a higher quality of food and a better taste of dishes. Therefore, it is no surprise that the restaurant at Otočec Castle headed by chef Nejc Ban received the top culinary award of the Michelin Guide in 2020 and 2021.
