A chef who continues her family tradition with dedication.
A dedicated chef
In 2016, Nina Čarman took over the family inn with her brother Gašper and renovated it in a more contemporary style. Despite the modernisation, they have retained the spirit of the old inn. The chef maintains the tradition of homemade cuisine based on local ingredients, but also relies on creativity and new flavours.

Čarman is the third generation of hospitality workers in her family and most of her dishes are based on old and well-tested recipes and local ingredients. The tasting menus reflect traditional local cuisine based on local produce, while each dish conveys creativity and features new flavours. It’s the flavour that makes a guest happy and it’s the ingredients that make the dish delicious.

Nina believes that hospitality includes a neatly intertwined network of various wonderful feelings of curiosity and a certain undefined happiness that a guest’s arrival brings. It’s that part of a person which gives the guest the feeling that they’re welcome. Hospitality should bring a smile to guests’ faces so that they return to the place where they feel at home and wanted.
One of the dishes which Čarman is particularly proud of is the traditional Škofja Loka dish made from potato and polenta, which was once considered a poor people’s food but has since been given a modern makeover. Loška mešta is Čarman’s favourite dish and one which her mother used to prepare. This dish is now refined with black Istrian truffles for a touch of modernity.
