A gourmet dive into the depths of the sea

The sea roars on the plate, and the aroma of the finest wine emanates from the glass. The first pick of gourmets who long for the outstanding delicacies from the sea.

Nova Gorica is the youngest Slovenian town, located on the border with Italian Gorizia. Gambling lovers from both sides of the border have been flocking here for decades, hoping for a lucky day at the Perla Gambling and Entertainment Centre. Some of them win, some of them lose. In gambling terms, the jackpot goes to guests of Calypso Restaurant.

The upmarket hotel restaurant hosts the most demanding gourmets and wine connoisseurs. They enjoy the spacious dining room with elegant place settings and top, French service.

The Mediterranean cuisine puts the flavours of the nearby Mediterranean Sea, roaring from plates, at the forefront. The flavours of the sea are skilfully interlaced with influences from Brda, the Vipava Valley, and the Karst.

They do superbly with wines, too. The sommelier chooses from a fine wine list that delights connoisseurs with its size and content. With such wines, exquisite bites become even more exquisite.

A wide range of cognacs and cigars add diversity to socialising which may be prolonged at Calypso well into the night.

What does the sea taste like?

At Calypso, the answer to the question above is short but telling. Superbly.

Fresh fish and other seafood are accompanied with Istrian olive oil, herbs, vegetables from the Vipava Valley, fruit from Brda, and first-class Piran salt.

Each day, five-course tasting menus are prepared for guests, predominated by top-quality sea ingredients. Shrimps, oysters, fish tartare or carpaccio are constants.

If you are not into the sea, you will be more than decently treated to exquisite land and freshwater experiences.
