The new Dolenjska cuisine is superb.
Although Trebnje is only 25 kilometres away from the capital, it feels like somewhere far in the countryside.
Here on the edge of the Dolenjska region, the Rakar family inn and mini hotel can be found. Theirs is a story built on heritage, history and family, which make up a solid foundation on which to create a sublime culinary story.
The shady terrace, where guests enjoy sitting, is surrounded by a meadow and vines. The dining room is modern and comfortable for several hours of culinary pampering. While tasting the new Dolenjska cuisine and selected wines, time flies quickly by in Rakar although no rush can be detected anywhere.
Chef Boštjan Rakar has brought a new, fresh approach into the traditional Dolenjska cuisine. “A good meal does not only fill you up, but also takes you on a journey to sources of pleasure perhaps already forgotten, and to places you’ve never been before,” he says.
His dishes tell stories about the idyllic rural environment in which they are created, and the ingredients delivered daily from surrounding farms. With precision and a great deal of imagination, the chef focuses on the presentation on the plate and seeks the most balanced flavours.
Rakar is also a sommelier in charge of the wine list. He is happy to take his guests to the wine cellar where there are more than 500 selected labels. What could be better than chatting with a glass of top wine in your hand, and also being served a piece of some local delicacy or two.
The food is delicious. Home-made pâté, for example. And roasted porcini mushrooms, lamb cutlet, perfectly agedbeef and many other things.
As a matter of fact, all the dishes on the menu are worth mentioning.
The choice is best presented by the tasting menu that will make you realise why so many satisfied guests return to Rakar time and again.
In 1998, chef Rakar made his great dream come true and became a hospitality worker. Next to his family, his work means the world to him.
He decided on the hospitality business when still in his teens while passionately learning in the kitchen and the dining room of the family inn.
