Chef Mitja is committed to top cuisine that has the pleasant scent of local ingredients. His dishes reflect values, such as respect for local roots, customs and tradition.
You can choose from multiple-course menus that will take you from the forest to the vineyards of Brda, and dive into the depths of the sea in between. An explosion of flavours and sensations in the refreshing surmullet with broccoli cream, red cabbage, young beetroot and olive cream. Or a tender duck leg with pea cream and preserved cherries. Or something else that is the chef’s inspiration of the day. The choice is sure to be right in any case.
He traded his studies in civil engineering to pursue his earliest interest - cooking.
The search for new combinations of flavours and ingredients that reflect the values and traditions of the Brda region is what motivates him most in his work.
He focuses on the flavours of nature, which he finds everywhere within the view from Brda – the sea on one side, the Alpine peaks on the other. Mitja is also an olive and fruit grower, so he always likes to incorporate these ingredients into his creations.
