Hiša Franko is one of the top 50 restaurants in the world, and chef Roš has been named the world’s best female chef of 2017 and the Ambassador of the United Nations World Tourism Organisation for Gastronomy Tourism.
The story and philosophy of Hiša Franko that place it among the top 50 restaurants in the world are closely linked with the Posočje region, one of Slovenia’s most majestic regions in the northwest. The emerald Soča River and the surrounding Julian Alps have imprinted a special character onto the landscape and people living there. Nature can be harsh and cruel, but also astoundingly beautiful and generous.
Hiša Franko is situated at the foothills of majestic peaks and pastures, far from the hustle and bustle, and close to the Soča. You can enjoy your meal in the glass dining room or in the elegant main room. Behind the house there is a vegetable garden where herbs are also grown. The guests can enjoy the best produce of nature and local people. Hiša Franko cooperates with local mushroom pickers, herbalists, shepherds, hunters and fishermen.
With their innovative cuisine incorporated with the best that the local environment has to offer, they set new standards in national and international cuisine. Their influence is spreading to many modern restaurants that look up to the best.
Although Hiša Franko has more than 50 years of tradition, its great breakthrough came with chef Roš who came to Hiša Franko for love. But not the love of cooking. That didn’t interest her much initially. When she and her former partner Valter Kramar, who inherited Hiša Franko from his parents, ventured on a joint culinary journey, the love of cooking also sprang eventually.
Curiosity, talent, hard work and some international experience soon paid off. At first, she particularly excited local guests, but after being featured in the Netflix series, Chef´s Table, in 2016, Roš and Hiša Franko became global gastronomic stars.
Already forgotten or even written-off ingredients find their way to the plates.
They are fermented, acidified, dehydrated, dried. Unimaginable combinations are suddenly likeable and flavours harmonious.
If you indulge in the whole experience, Hiša Franko will pamper you with an 11-course meal.
The culinary world and foodies praise her to the skies. What will she conjure up next?
Ana’s fingers turn even the most modest ingredients into sophisticated creations in unexpected combinations. Her plates tell the story of the Soča Valley and its not very distant surroundings.
