Simple Slovenian dishes in Fink are so delicious that they satisfy even the most demanding foodies. Something simple or served in several courses.
It seems as if the world spins at a somewhat slower pace in Irča vas, a stone’s throw away from Novo mesto in the Dolenjska region. The Krka River is not in a hurry to leave this area and people still like to take time to socialise while enjoying a glass of wine. The soil is fertile and generous to the people of Dolenjska. Time and the best produce from the soil make Slovenian traditional dishes so delicious.
Fink’s staff are early risers, so that they can prepare fresh bread every day. Simmering can be heard from the pots where fresh ingredients recently taken from the soil are waiting to be put on plates.
Locals, Damjan and Tanja Fink, have decorated their Fink House in their own way. Food is enjoyed at a more relaxed pace in the restaurant section, while those with less time frequent the bistro.
The furniture is modern and comfortable, and so is the service. The guests enjoy sitting on the terrace, and many also visit the wine cellar where they can find 350 brands, of which a good tenth are also on the wine list.
While chef Damjan masters meat, fish and vegetarian flavours, Tanja excels in desserts. Her desserts are as light and soft as the gentle breeze blowing over the Dolenjska hills.
The word about the flavours on offer in Irča vas is spreading over the Dolenjska hills to other parts of Slovenia. Sometimes it goes beyond, across the border, but always with good reason.
The flavours are simply exhilarating, be it a Krškopolje pork roast, pumpkin blossoms stuffed with herbs and a cream of local cheeses or something else.
On his independent hospitality path, he is known for traditional dishes, elegant and sophisticated plates, and signature flavours.
Chef Damjan Fink started his culinary journey at Otočec Castle. He added to his knowledge at Hiša Franko and showed his best skills at The Na Gradu restaurant in Ljubljana. At Fink House, he evolves his own story, which food lovers have easily taken as their own.
