Stara gostilna

  • MICHELIN GUIDE 2022

One of the oldest Piran restaurants with a new concept

Just a stone’s throw away from the hustle and bustle of the Piran waterfront, and far away from having a classic seaside offer.

The Stara gostilna Restaurant is located in between the picturesque houses of Piran. Its famous atrium allows guests to indulge in the therapeutic scent of sea spray in the summer, and observe what’s happening on the streets of Piran. The intimate but glamorous ambiance is full of creative secrets.

Along with the decor, aesthetics are also a mainstay on the plates of young chef Kristian Zule, the right hand man to the owner Donata Krašek. These two main creative forces at Stara gostilna Restaurant, with the support of their team, strive for a cosmopolitan culinary offer that combines tradition with modernity.

Innovative upgrade of the local and regional

Navdih črpajo iz lokalnega okolja in bogate gastronomske dediščine regije.

They draw inspiration from the local environment and the region’s rich gastronomic heritage. The most important elements are the seasonal, local, traceable and quality ingredients. The chef respectfully and carefully selects them while following the principle of zero waste.

Guests love to order their famous steak tartare, scallops, golden “črnina” with beluga caviar, foie gras and sweet “a la chef”, or embark on the culinary adventure brought on by the 8-course tasting menu. Each course is an adventure in itself, but what all of them share is an innovative modern upgrade, an elegant interpretation of Karst and Istrian flavours, and a unique sensory experience.

House sommelier Zoran Bogdanovski takes guests on a tour through as many as 400 Slovenian and foreign wines waiting to be tasted in the wine cellar, with a selection of excellent top-quality cigars providing the finishing touch.

The Stara gostilna Restaurant is the reason Piran is not just about the sea any more. Combining culinary heritage with youthful imagination and talent is undoubtedly a wonderful motivation for a visit.

Meet the chef

Moulding the culinary future from authentic tradition

Kristian Zule - Kiki never lets up in the kitchen. That's why his plates are always perfect - just the way he painted them in his mind.

Perhaps his dedication to perfection was the reason he became the youngest Slovenian chef to receive a Michelin award in 2021. Despite his youth, he is responsible, brave and innovative in creating his dishes.

His cuisine is based around creatively reimagining the culinary past of the surrounding area. He uses quality seasonal ingredients based on authentic tradition in order to mould the culinary future. All the while being aware of the importance of his circle of suppliers, since the main star of the kitchen is and always will be – the ingredient.
