Stara gostilna

  • MICHELIN GUIDE 2021

An old inn with new offerings

Only a stone’s throw away from the hustle and bustle of the Piran waterfront and worlds away from the traditional coastal offerings.

The centre of Piran is home to Stara gostilna with the prominent glass conservatory, located among picturesque houses of Piran. The conservatory is opened up in the summer, enabling guests to breathe in the warm sea air and connect with the buzz of the streets of Piran.

The modern ambience of Stara gostilna is made to impress. Designer chairs sit next to tastefully set tables in the conservatory and the dining room and the elegant display cabinets provide a safe haven to first-class spirits.

The service and the offerings are at top level, far beyond a traditional coastal menu. Chefs Irhad Jusić and Kristian Zule pay a great deal of attention to details. Therefore, each plate and glass are carefully selected and the plating is different each time. Their dishes are a creative show starring harmony and elegance.

Lovers of fine flavours will be thrilled with the rich wine list, which includes 270 labels of Slovenian and foreign wines.

More than just anchovies and calamari

Tasting at Stara gostilna is a show for which you must take time.

Dishes are served in very innovative ways, for example with a tree in the middle of a table, carved granite balls, armrests, frozen stones from the sea, and similar unexpected ‘plates’.

Of course, the menu also includes anchovies and calamari, which, however, are prepared and served differently.

Meet the chef

They do not hide their ambitions for improvement

Chefs Irhad Jusić and Kristian Zule have a talent for the dramatic and a desire to create.

They can live that out at Stara gostilna, as they are supported by the owner, guests, and last but not least, the location. They like new challenges and bold combinations. To this end, their cuisine teems with strong flavours, conspicuous details, and surprising elements.

Stara gostilna led by the previous chef Gradimir Dimitrić received ‘The Plate Michelin’ in 2020, while the goal of the young chefs is to maintain and even upgrade the level of their offerings.
