A chat with Luka Jezeršek and Monika Avsenik
LJUBLJANA (LJUBLJANA & CENTRAL SLOVENIA)

What do Avsenik’s tunes, the St Martin’s Day tradition and contemporary cuisine have in common? More than you might think at first glance.
Chef Sebastjan Elbl from Gostilna na Gradu – a restaurant run by the Jezeršek family – drew inspiration for the festival dish ‘Džuskanja’ with Luka Jezeršek and Monika Avsenik from Monika Avsenik’s musical work, in which she weaves the rich heritage of Slovenian folk music with her own musical expression. Just as Monika remains true to her musical roots whilst forging her own path, the chef has also reinterpreted the traditional St Martin’s duck in a contemporary style. St Martin’s duck, inspired by Monika’s music Roasted duck breast, demi-glace sauce, prune gel, Jerusalem artichoke purée and crisps The succulent duck breast is accompanied by a rich demi-glace sauce, the delicate sweetness of prunes, and Jerusalem artichoke in two textures. These familiar autumnal flavours thus come together in a unique culinary harmony, in which every ingredient has its own distinct note. At the ‘Džuskanje’ event with Luka Jezeršek and Monika Avsenik at Gostilna na Gradu, the story will come to life beyond the plate. Luka, who is particularly passionate about music as well as cooking, and who has known Monika for many years, will swap his wooden spoon for a microphone on this occasion. Together with Monika and presenter Boštjan Napotnik, they will ensure an unforgettable evening, interweaving exquisite flavours, music and fascinating stories.
